This humble dish appears every day on the Monastery table.
Now that it is turning colder it is time for a good warm breakfast. Oat groats offer whole grain nutrition as a great start to the day. Groats are the whole oat grain with only the hull removed. We have been focusing lately on the body as the vehicle of awakening. With this in mind we continually strive to provide the best nutrition, in thanksgiving for the gift of life. This is one of those dishes.
Oat Groats
1 cup of oat groats
3 ½ cups of water
¼ teaspoon salt
The evening before serving, rinse the groats throughly by placing in a bowl. Cover with water, swish, and drain. Do this twice.
Place drained oats, water, and salt in a pan and bring to a boil. Cover the pan, turn off the heat, and allow to sit overnight.
The next morning bring the groats to a boil, reduce the heat to a simmer and cook for 15 minutes. Stir frequently during this cooking period. Add more water as needed.
Serve.
You may serve with your favorite additions, such as toasted nuts, raisins, or dates. The possibilities are endless! Enjoy.
