“Simple foods” are a combination of a grain, a legume and a vegetable served together to create a meal with complete protein. We frequently add a salad topped with fresh veggies, nuts and Quorn Tenders. The results are easy to prepare, well-balanced, nutritious meals that are remarkably delicious in their simplicity. We’ve been enjoying some great combinations: short grain brown rice, adzuki beans and fresh garden kale; barley, lentils and steamed carrots; couscous, garbanzo beans and steamed broccoli. The possibilities are perhaps not endless, but many!
Eating simple foods is practice at looking to my experience over conditioning. Conditioning would say that simple foods are boring. When I look to my experience, that is not the case at all--the flavors of the food are so enjoyable. What I love most about simple foods is how good it feels to my body. I’ve found that I prefer those meals to more complicated, “interesting” menus. Simple foods taste good and eating them feels good.
We’ve just launched our new retreat menu containing many simple food lunches. I am eager to introduce others to the pleasure of simple, nutritious vegetarian eating. Join us on retreat and taste for yourself!
