Here are the qualities of a good friend that I've received from the food served here at the Monastery. (But I would venture to say they are present in food everywhere.)
- It shows up whenever we ask.
- It offers itself freely.
- It never complains about being unappreciated or abused, even when it is.
- It always maintains the essence of itself no matter how we might try to change it. Tomatoes always taste like tomatoes, berries are always berries regardless of form.
- It gives and gives -- everything it has to give! (i.e. nutrients of all varieties)
As we are reminded by all great spiritual teachers: if our only prayer is "thank you," that would be adequate. May we live in "thank you" for the generosity of all our good food-friends!

Here is a recipe that we enjoy every summer. It shows up regularly, just like an old friend.
White Rabbit Salad
3 cups cottage cheese
1 Tbsp. poppy seeds
2 Tbsp. lemon juice
1/3 cup toasted, chopped walnuts
1 cup apples, cut into ΒΌ-inch pieces
5 cups other fruit: peaches, pears, nectarines, red and green grapes, oranges, or melon (grapes should be halved; soft fruits should be cut into 1/2-inch pieces)
Makes 8-9 cups
