Celery appears to be one of those supporting cast vegetables and never the star of the show. We found a delicious and easy soup that gives celery a chance to shine.

Cream of Celery Soup

  • Adapted from Ten Talents Vegetarian Cookbook by Rosalie Hurd and Frank J. Hurd

Makes about 4 cups of soup

Ingredients:

2½ cups chopped celery
½ cup celery tops, chopped
½ tsp. ground fennel
½ cup diced carrots
2 cups of water with ½ cup of raw cashews
2 cups of veggie broth
3 Tbsp. arrowroot powder
1 Tbsp. onion powder
1 tsp. vegetable salt, to taste

Instructions:

  1. Steam the 2½ cups chopped celery and diced carrots until tender.
  2. Blend until smooth the steamed celery and carrots, water with cashews, veggie broth, arrowroot powder, onion powder and vegetable salt.
  3. Stir over medium heat to boiling, until thickened.
  4. Before serving add the chopped celery tops and ground fennel.

Serve warm
